Caribbean Ackee and Saltfish with fried plantain

  • 805 Piri Piri spice mix
  • 300g of boneless salted Cod
  • 1 onion sliced & 1/2 a Spring onion
  • Sprig of fresh Thyme
  • Bell Peppers
  • 1 can of Ackee


Wash all the salt from your Cod, soak for 1 hour in cold water and rinse again in warm water and soak for another hour.
Start by chopping all your vegetables and placing these to one side. Next heat oil in a pan and add onions, bell peppers and thyme. Sprinkle in 3 tbsp of 805 Piri Piri and allow mixture to warm through stirring occasionally.
Next add salted Cod (chopped) and allow to cook for 5 minutes stirring occasionally. Finally add your drained can of Ackee to the pan and let cook for a further 5 minutes, stirring as needed and adding further Piri Piri to desired heat and taste.
